Tasty Mexican Pasta Salad Recipe
With everyone in the family spending more time at home these days, I’ve decided that now is the time to up my lunch game! This is one of the first new recipes we found and tried, and liked. I find it best to start with quick and easy recipes, so when I found one that fit that mold I thought I’d share it with you all! Additionally- for those of you looking to ensure you use up leftover ingredients from other recipes, consider pasta salads as a good way to mix everything together and use it up. This one was delicious, and super simple to make. The majority of the work was just cooking the pasta, so it’s not exactly difficult! We had some leftover corn and black beans that we were looking to use up, so we used whatever we had remaining. We also held the tomatoes in the mixing, because not everyone in the house enjoys them. One of the great things about this recipe is the ability to customize based on preferences for your household! We chose to include:
- Farfalle Pasta
- Canned Corn
- Chopped Fresh Peppers
- Dressing (non-mayo)
- Chopped Fresh Red Onions
- Shredded Cheese
- Canned Black Beans
- Chopped Fresh Avocado
